When it comes to knowing about preparing good tucker, you can’t get past the Country Women’s Association! Now the CWA’s Victorian branch has produced a great new book of recipes for cooking on a budget called Thrifty Cooking (Murdoch Books). It contains more than 170 reliable recipes and hundreds of budget-friendly hints. It doesn’t get more country than a good fruity chutney. Here’s one from the book for all those those summer snacks and tasty treats.
Makes approximately eight 375g jars
- 750 g ripe tomatoes
- 450 g brown onions
- 250 g cooking apples
- 500 g firm pears
- 6 garlic cloves
- 100 g fresh ginger
- 1–2 red chillies
- 400 g raisins
- 1 tablespoon salt
- 900 ml white wine vinegar
- 750 g demerara sugar
Skin the tomatoes by cutting a cross in the base of each one, then immerse for a couple of minutes in boiling water. When the skin begins to come away, drain the tomatoes, then peel and chop them.
Chop the onions. Peel, core and chop the apples and pears. Peel and crush the garlic, and peel and grate the fresh ginger. Deseed the red chillies if you want a milder flavour, then chop finely.
Place all the ingredients in a preserving pan, and bring slowly to the boil, stirring until the sugar has dissolved. Once the sugar has dissolved, increase the heat to medium and simmer approximately 1½ hours until the chutney is thick.
Pour into sterilised jars, seal and label.
